I love noodle dishes because not only they are delicious but they are rich in carbohydrates, which is a good source of energy. To make it into a full meal, it is best paired with vegetables, proteins, and different sauces.

In this post, I am going to show you how to make a delicious Singaporean stir-fried noodle dish called Beef Kway Teow which has a smoky aroma with a balance of sweetness and savory. Some locals called this dish a Beef Hor Fun which is a popular noodle dish served in a food stall in Singapore.

Here are the ingredient to make this delicious Beef Kway Teow:

I. Ingredients for Marinating the Beef

Beef: For the beef, I make sure it is a thinly sliced beef. You can use any type of boneless beef but I recommend sirloin or flank steak.

Sauces: I used both oyster sauce and soy sauce since they provide an umami and savory flavor to my beef.

Sesame Oil: Sesame oil is a popular condiment in Asian cooking that helps add a nutty flavor to the beef.

Cornstarch: The cornstarch helps tenderize the meat to prevent moisture loss during cooking.

Black Pepper: In addition to seasoning, it will add a peppery flavor to the beef.

II. Ingredients for the Noodle dish

Noodles: The noodles I am using a rice noodles which a flat, translucent noodles made from rice flour and water.

Sauces: I am using sweet soy sauce which adds sweetness; soy sauce for savory and salty flavor; and oyster sauce for umami and savory flavor. These 3 are an important condiments for my noodle recipe.

Vegetables: There are 2 vegetables I am using for this dish: The bean sprouts and the green stalk of the spring onion.

Egg: The egg is a traditional ingredient that I used to make into a scrambled and mixed with the noodles, creating a flavorful coating.

Other ingredients: The rest you will need ginger, garlic, and white spring onion for adding flavor and aroma to the dish, and vegetable oil for sauteing the ingredients.

Things to do first before cooking

Before you start cooking the Beef Kway Teow or Beef Hor fun, it is important that you soak the rice noodles in warm water for 30 minutes. That is because you want to make the noodles soft before you start sautéing with the rest of the ingredients.

Step by Step Instruction

I. Marinating the Beef

  • In a large plate bowl, I add the thinly sliced beef and mix it with the sauces, sesame oil, black pepper, and cornstarch.
  • I gently mixed it to combine and kept it in the refrigerator for 30 minutes. For the best result, you can store it overnight.

II. Stir frying the Beef

  • Add several tablespoons of vegetable oil to the pan.
  • Once it becomes hot, I add the thinly sliced beef and let it stir-fried on both sides till it turns brown.
  • Once done, I transfer it to the plate and set it aside.

II. Cooking the Kway Teow Noodle

  • By using a wok, I add vegetable oil and then saute the ginger, garlic, and white spring onion.
  • Once they are cooked and translucent, I add the rice noodles and give them a quick stir for a few seconds.
  • Next, I move the noodles to one side and then place the egg on the other side. Stir the egg till it turns into a scrambled. After that, I mixed it together with the noodles.

  • Next, I poured all the sauces and gave it a quick stir.
  • After that, I added the bean sprouts and green stalk of the spring onion. Mix gently.
  • Lastly, I added the fried thinly sliced beef. Stir to combine before turning off the heat.

Tips and Hints

  • Make sure the beef is thinly sliced since this will help make the beef tender. If the beef is thick, the texture might be rubbery.
  • To have a more flavorful and succulent beef, marinate it for at least 30 minutes or longer.
  • Use high heat when cooking this recipe since it is traditional to have a smoky aroma and charred flavor.
  • Do not overcook the bean sprouts and the green stalk since you need to retain their crunch and vibrant color.
  • Do not overcrowd it with noodles since this will make the dish dry due to less sauce. You want to make sure the noodle is saucy.

Substitution

  • In place of beef, you can use chicken, pork, lamb, or even tofu for a vegetarian option.
  • If you don't have sweet soy sauce (kecap manis), you can replace it by combining soy sauce and brown sugar.
  • You can use other vegetables like Bok choy, spinach, or chives.
  • If you don't have rice noodles, you can use udon, wheat, or egg noodles.

Ingredients

Marinating the Beef

  • 500 gram of thinly sliced beef
  • 2 tablespoons of soy sauce
  • 2 tablespoons of oyster sauce
  • 1 tablespoon of sesame oil
  • 1 tablespoon of cornstarch
  • ½ teaspoon black pepper
  • Vegetable oil for frying

For Kway Teow Noodle Dish

  • 300 grams of rice noodle
  • 1.5 cup of beansprouts
  • 5 pieces of green stalk spring onion cut into 3-4 inches length
  • ½ cup of spring onion chopped
  • 3 cloves of garlic grated
  • ½ teaspoon of ginger grated
  • 2 tablespoons of soy sauce
  • 2 tablespoons of oyster sauce
  • 2 tablespoons of sweet soy sauce
  • 1 egg
  • 2 tablespoons of vegetable oil

Instructions

Marinating the Beef

  • Add the thinly sliced beef and mix it with the sauces, sesame oil, black pepper, and cornstarch in a large plate bowl.

  • Gently mix to combine and store in the refrigerator for 30 minutes to absorb the flavor

Stir Frying the Beef

  • Add 3 tablespoons of vegetable oil to the pan

  • Add the thinly sliced beef and let it stir-fried on both sides till it turns brown

  • Transfer it to the plate and set it aside

Cooking the Kway Teow Noodle

  • Add tablespoons of vegetable oil to the wok or large pan.

  • Add chopped spring onions, ginger, and garlic. Saute till it turns translucent or cooked.

  • Add the soaked rice noodles, that was soaked in warm water and stir to combine

  • Move the noodles to one side and then place the egg on the other side. Stir the egg till it turns into a scrambled. Mix to combine.

  • Pour the soy sauce, sweet soy sauce, and oyster sauce. Give it a quick stir,

  • Add the bean sprouts and green stalk of the spring onion. Mix gently. Do not overcook it.

  • Add the fried thinly sliced beef. Give a quick stir before turning off the heat.

Notes

  • Soak the rice noodle in warm water for 30 minutes to make it soft.
  • Do not overcook the bean sprouts and the green stalk since you need to retain their crunch
  • Use beef flank steak or sirloin
  • You can replace green stalk of spring onion with chives if you like.
