How to makeLemon Snowball Cookies!

These delicious cookies require just a few ingredients. I used butter, cornstarch, lemon and confectioner’s sugar as the main ingredients. Lucky for me, I had them all in my pantry!

The cookies are easy to make. Just combinethe flour, cornstarch and sea salt in one bowl and then beat the butter with the confectioner’s sugar, lemon juice, zest and extract in a stand mixer.

Combine the two and mix well, and then cover the bowl with Saran Wrap and refrigerate for 30 minutes. (this will make the cookies easier to roll into balls and will help them to keep their shape in the oven.)Lemon Snowball Cookies - Snowball Cookie Recipe (3)

Total Time52 minutes

Ingredients

  • 1 cup unsalted butter, at room temperature
  • 2/3 cup confectioner's sugar
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon lemon extract for a bit of extra tartness
  • 1/2 teaspoon sea salt
  • 2 teaspoon lemon zest
  • 2 cups all purpose flour
  • 3 tablepoonscornstarch
  • 1 1/2 cups powdered sugar + 2 teaspoons lemon zest, for rolling the cookies

Instructions

  1. In a medium sized bowl, whisk together the flour, cornstarch and sea salt and set the bowl aside.
  2. In the bowl of a stand mixer, mix the butter on medium speed until creamy, about 20 seconds. Mix in 2/3 cup of the confectioner's sugar. Mix in lemon juice, lemon zest, and lemon extract . With the mixer set on low speed gradually add in flour mixture and mix just until combined.
  3. Cover the bowl with plastic wrap and chill for 30 minutes. This will make it easier to form into the snowball shape. Preheat oven to 350 degrees halfway through the chilling.
  4. Scoop the dough out 1 Tbsp at a time and roll into balls, then place balls on a baking sheet lined with silicone baking mat or parchment paper, spacing the cookies about 2-inches apart.
  5. Bake in preheated oven for 12-14 minutes. Remove from oven and allow to cool several minutes but not completely cool.
  6. While the cookies are still a bit warm, pour 1 1/2 cups confectioner's sugar into a bowl and roll the cookies in the sugar.
  7. Transfer to a wire rack to cool. Once cookies are completely cool, roll in the confectioner's sugar one more time, being sure to generously coat the snowballs by pressing them into the sugar to give them a thick coating.
  8. Store cookies in an airtight container for three days or freeze for one month.

FAQs

Why do my snowball cookies go flat? ›

Why did my snowball cookies turn out flat? Snowball cookies should not flatten. Since they do not contain a leavening agent, the main factor to check is that the dough is chilled before baking.

How long can you store snowball cookies? ›

How Long Do Pecan Snowball Cookies Last? Store cooled cookies in an airtight container at room temperature for up to five days. Freeze for up to three months for longer storage.

How do you make cookies flatten more? ›

Cookie baking temperature and time

Higher temperatures promote faster spread, while lower temperatures result in slower spread. Additionally, longer baking times can encourage more spread. Experiment with different temperatures and baking times to find the perfect balance for achieving your desired cookie.

How do you make cookies rise more? ›

Baking Powder. The type of leavening you use in your cookies doesn't just help them rise while baking, it affects their texture and structure too. Baking soda in cookies yields a denser cookie with craggy tops, while baking powder causes cookies to rise higher during baking for a cakier texture.

Can I freeze cookies with powdered sugar on them? ›

You can freeze filled cookies, such as thumbprint cookies and cookies that are coated in powdered sugar, such as Mexican wedding cookies either after they are baked or freeze the cookie dough. If you're freezing the baked cookies, wait to fill them or roll in powdered sugar until you're ready to serve.

Does freezing cookies make them last longer? ›

Wait for the cookies to cool completely, then transfer them to a reusable freezer-safe bag or container lined with wax or parchment paper. I like to place them in a single layer to avoid any cookies breaking. Cookies will keep well for up to 2 months. Once ready to eat, simply thaw out at room temperature and enjoy.

Can I store snowball cookies in the fridge? ›

How to Store Snowball Cookies. Snowball cookies will last up to 3 days at room temperature, in a sealed container, or up to 2 weeks if stored in the refrigerator. Add them to your Christmas Dessert Charcuterie Board when ready to enjoy!

Why are my cookies coming out flat? ›

Why did my chocolate chip cookies turn out flat and spread out so much? Cookies generally spread out more if there's no leavening agent. Some cookie recipes don't call for baking powder or baking soda. If that's the case, 'flat and spread out' is what the originator intended.

How do you make cookies fluffy and not flat? ›

Butter keeps cookies fluffy in two ways. First, creaming cold butter with sugar creates tiny, uniform air pockets that will remain in the dough it bakes up. Second, cold butter naturally takes a longer time to melt in the oven.

Why don't my cookies stay puffy? ›

Try decreasing the number of eggs in your recipe, or use egg yolks in place of whole eggs. Too much sugar, not enough flour. Using too little flour will prevent rising, and too much sugar will result in more spreading since sugar liquefies when heated. The baking sheet was too warm or greasy.
