The Ultimate Vegan Smashed Potatoes

Creating the ultimate vegan smashed potatoes in no small task. Traditional mashed potato recipes will rely on butter, heavy creamy, and loads of salt. Even most vegan versions can use lots of vegetable shortening. While these adds rich flavor, they aren’t necessarily healthy.

For these plant-based vegan smashed potatoes, I knew I had to amp up the flavor. Here are the steps to create the ultimate plant-based mashed potatoes:

  • Creamy Red and Yukon Gold Potatoes – It starts here. These little potatoes have light, fluffy texture. Plus, you can’t beat the golden hue they give to the final smash.
  • Steam off as much water as possible – Once the potatoes are done cooking, drain them really well. Then, return them back to the same pot. Start mashing them immediately. You’ll notice a lot of steam come off — and that’s a good thing! Let them steam as much as possible. This will give you a lighter, fluffier mashed potato.
  • Help from the spice cabinet – Take some help from the spice cabinet. Add onion powder and granulated garlic for savory flavor. Plus, a sprinkle of nutritional yeast adds a deep “umami” quality.

Thin-Skinned Potato Love: Using thin-skinned Yukon Gold and Red Potatoes means you don’t have to peel them. They also add a nice, creamy texture to the dish.

Ingredients

  • 3 pounds potatoes mix of red and Yukon gold
  • 1/2 tablespoon onion powder
  • 1 teaspoon granulated garlic
  • 1/2 tsp black pepper
  • 1/4 teaspoon salt
  • 2 cups plain almond milk
  • 1/2 bunch parsley
  • 1/4 cup nutritional yeast

Instructions

  • To make the Ultimate Vegan Smashed Potatoes: Wash and cut potatoes into large chunks, about the same size. Place the potato chunks in a large pot, cover with water, and bring to a boil. Boil until potatoes are tender, 7-10 minutes. Meanwhile, wash and chop parsley.

  • Check potatoes with a knife-they should easily slide off when done cooking. Drain the potatoes. Enjoy the steam facial.

  • Immediately place potatoes back in the hot pot. Using a potato masher, begin mashing the potatoes. Let them steam a bit more to get rid of some of the liquid. The drier they get now, the creamier and fluffier they will be later. Add the onion powder, granulated garlic, black pepper, and salt. Mash for 30 seconds, until the garlic becomes aromatic. Add the almond milk, parsley, and nutritional yeast. Keep mashing until well-combined and creamy. Taste to adjust seasoning.

  • Serve warm.
